The La Frassina winery was founded in 1940 in the municipality of Caorle, within the province of Venice. The entire extension is due to the recovery of an originally valley area, restored thanks to the excavation of canals for the collection of water, the work of dewatering pumps, the construction of new embankments and the strengthening of the old ones.
Located about ten kilometers from the sea, the company is enclosed by valleys, resurgence rivers and cultivated lands. The wine area to which it belongs is that of the controlled designation of origin Lison-Pramaggiore.
The cellar, obtained from the renovation of a company stable, was conceived as unaltered as possible the original structure and consists of four rooms: the first used for winemaking, the second and third for the maturation and storage of wine and the last all ‘hospitality. The vinification takes place in steel tanks with temperature control and, depending on the types processed, can last from 7 to 20 days. The wine is then stored in steel tanks or transferred, for its maturation, to oak barrels. The entire winemaking process, while making use of the most modern technologies, aims to limit all those interventions that would risk modifying the characteristics of the wine, with the ultimate aim of preserving the typicality and all the peculiarities linked to the seasonal trend.
